About beans:
Sewda Natural Coffee Processing Wet Mill, where this Sawana lot comes from, is located in the region of Oromia, Guji, Ethiopia. It is a purchasing and processing station, where local coffee farmers harvest ripe cherries and deliver them daily. It serves around 600 smallholder farmers in the area. Upon delivery, cherries are weighed, organized, and sorted accordingly. Contributing producers are paid a market price that includes a premium for high-quality selection.
Sewda Wet Mill is owned by Testi Trading PLC, a family-owned company embedded at the origin to supply the specialty coffee industry with high-quality coffee beans. Mr. Faysel together with his family established Testi Trading PLC in 2009. The name ‘Testi’ means joy or Happiness in the Harrari language (it is also the name of Faysel’s middle son). Testi is focusing on quality and long-term relationships, as well as maximizing the potential of Ethiopian Coffee. Their focus is to work with their supply chain of smallholder farms to improve their livelihoods and living conditions.
The present lot followed a washed process. After coffee cherries are delivered to the washing station, they’re carefully sorted and floated to remove any defects, ensuring only the highest quality cherries make it through. The cherries are pulped and fermented for 26-32 hours, then washed and further sorted before being laid out to dry on raised beds.
It takes 10-14 days for the beans to reach their optimal moisture level, and they constantly have to be turned and raked to maintain drying consistency and quality. The beds are also covered every day between 12-3pm to protect the delicate coffee beans from the sun, and again at night as a barrier against humidity.
In the cup, you will find an elevated classic washed Ethiopian profile, expect notes of rose hips, iced tea, and bergamot.

This short run espresso is covering a logistical mishap - our next espresso was due to be unloaded into the warehouse on the first of may - we found out on the 5th that not only had it not landed in the country, it was delayed by 3 weeks with a transhipment and was still on the water. A mad scrabble to look through the proverbial rolodex of cupping notes alighted us on this community lot from Chacra - super high altitude farms from a somewhat inaccessible and under-appreciated region of Peru, Cumaccha is named after the "Cataratas de Cumaccha" waterfalls, a local beauty spot hidden in the cloud forests - which is the perfect fodder for a brief to Lucas!
We’re tasting:
Mega sweet & chocolate forward - we're getting yorkie esq biscuit & raisin with sweet milk chocolate. There's a mixture of fruit compote and cakey notes behind that remind us of mixed berry muffins with a crumble top, alongside dried mango and strawberry. There's a slight catimor note present that is expressing as walnut & brazil nut, and the processing is evident in the finish as just a hint of aperol style booziness, with a super dense body

Sweet and tart key lime pie and juicy citrus reminiscent of lemons and grapefruit. This coffee has a light body and a long citric finish.
About The Producer
Yilver Andrés Pajoy is a second-generation coffee grower from the rural town of Alto Cañada in La Plata. Besides coffee, Yilver and his family grow beans and raise cattle. He is related to two partner producers of our importer Osito: Yesid Pajoy and Didier Pajoy. This is his first time placing in the top five for the Copa de Oro of the Western region, a very exciting feat to accomplish!
Processing
This Geisha micro lot was fermented in its whole cherry form for 36 hours after coming in from the coffee fields. The cherries were then de-pulped and dry-fermented for an additional 36 hours. The coffee parchment was then rinsed and placed to dry on raised beds inside a parabolic greenhouse dryer for 18 days.

Production, harvest, wet- and dry-milling are all done by the Argote family. Produced without pesticides, the Argote family inspects all coffee trees visually for signs of leaf rust. Transition to regenerative agroforestry on its way. Actively creating a village of specialty coffee producers.
This double-fermented washed Pink Bourbon lot is very clean and complex, with notes of grapefruit, nougat, and orange blossom.

Joaquin Lipa's Bourbon is an all-around fantastic coffee. His coffee is bigger on the body, medium+ sweetness & an acidity that lightly sparkles. In the cup we get notes of juicy dark fruit like Malbec grape, currant, pluot, blueberry and the like. It's a layered profile with a well rounded and full feel hinting at cacao with a tropical perk. Mr. Joaquin Lipa is presenting a very good example of Bourbon near its best.

We got the opportunity to return to the esteemed Finca Maputo, who have successfully seen some podium finishes in the Taza Dorada (Best of Ecuador competition) as well as placing in the Cup of Excellence. Run by two retired Medicines San Frontières doctors (Henry is from Ecuador, his wife Verena is from Switzerland - but they met during their time working as rural doctors in Burundi, showing that coffee and the lands it grows in can facilitate connections in pretty magical ways), Maputo specialises in excellent honey processed lots, with plots growing H9, Sidra, Mejorado, and SL-28. Having released the SL-28 as an LCF exclusive, we're dropping the other lot we purchased from them - a super fun Sidra honey. Really unique flavours - all the big purple jammy notes we might expect from a funky natty, but none of the acetic acid we'd expect with the funk. Purple and clean?? Wild
We're tasting:
Big passionfruit, bubblegum and grape aromatics. In the cup it's super sweet - we're getting purple grape juice, a white sugar sweetness (together, it reminds us a little of shloer), with supporting notes of nectarine, honeydew melon, and blackcurrant, alongside lemon/lime soda. Super bright and sweet, as it cools becoming a little more textural and less acidity driven- we're finding passionfruit curd & the grape note becomes more like grape jelly. Everything about it screams like it should be funky, but it's elegant, clean and delightful

Quality and consistency. It’s not easy when you’re a farmer, with changing weather and different circumstances on a yearly or even seasonal basis, to match the same flavor profile as last year. It might even be impossible. For this reason, the team of Q-graders of Capricornio Coffees cups all the coffees of the more than a dozen partner fazendas and farmer groups, grades them according to their flavor and quality, and then makes farmer blends, solely based on taste. Since 2022, Capricornio Coffees designed a program to achieve the flavour stability we seek while only sourcing from the same partners year on year in their trusted network: São Jerónimo da Serra, Mulheres do Café Matão, Fazenda Fronteira, and Fazenda California. For example, the Dulce Signature blend is described as dark chocolate, with a sweet and round thick body. One year, this might consist of more coffee from Fazenda California and less from São Jerónimo da Serra. The year after, this might be the other way around.
Farm composition in the coffee bag might change, but the farms don’t sit still either. Being part of Capricornio’s 4 Seasons Project, they get free agronomical support, with an agronomist visiting them every 60 days. Together, they look at plant and soil health and do soil measurements, which are used to advise on which parts of the farms need extra attention. It’s high-end knowledge and a solid partnership to provide a sustainable future.
The cup profile gives us everything we want in a good Brazilian coffee: good body and sweetness, mild acidity, and heavy chocolate and nutty flavours without any fruit notes. A true crowd pleaser.

After featuring a run of FW Kebena estate in Facility last year, we've had this lot patiently waiting in the wings for us to wait out our Colombian allocation. A touch more development - as befits the time off the trees - has produced a very balanced and enjoyable decaf.
We’re tasting:
Syrupy and thick, we're finding chocolate orange as the dominant character, alongside malted milk biscuits, light fudge, brazil nuts and a hint of baking spice; with a balanced acidity
In milk - bourbon biscuits, super sweet.
