By purchasing this espresso, you are directly helping the next generation of theatre practitioners access affordable, dedicated space to create their work.

We think a lot about the trilemma of green buying: out of cheap, ethical and high quality, you can only pick two. Here we're choosing affordable and ethical, sourcing from farms completing excellent ecological work, alongside buying the lower grade bulk production from producers already in our network. It's always frustrated us that speciality roasters will champion social good then only sweep in for the top microlot, leaving bulk production to the side. We've been guilty of this ourselves at times, and this espresso is our chance to make amends and become better partners with the producers with whom we work.

By shifting our focus from intrinsic cup quality (the hunt for sparkly acidity and intense aromatics) towards extrinsic value, the attributes that exist around the coffee rather than in it: who grew it, how the land is managed, and whether we're buying in a way that actually supports bulk production, we gain the space to lean into the flavours we add through a heavier roasting influence - roasting as a transformational value add.
This will not be some cheap, bitter & smoky afterthought - we intend to source and roast this with the same care and attention as everything else on the range, just pointed in a different direction.

We intend this to broadly be a single origin coffee, but future versions may also be blended.

V2: We selected this coffee to run as both a Facility component and Interval, as we get a handle on the volumes we need to buy and get the upstream pipeline rolling properly. He started his coffee career learning in the Urrao producers co-operative championed by Unblended's team alongside producers like Viktor Pineda and Daniel Hernandez, who's coffees we've recently featured as intensely floral and fruited examples of the Chiroso production happening there. Sergio's farm Los Pinos sits at a soaring 2,400masl, providing an extremely unique microclimate with some of the highest growing altitudes in all of Colombia. At just half a hectare with only 4 employees, Sergio's operation is very tight-knit, well controlled, and highly quality focused, producing just under 1,000kg for the lot that ended up winning the Tierra De Diversidad competition. Due to the high elevation, the fermentation times used here are quite long, with a total of 72 hours held in cherry underwater still somehow yielding quite a clean cup as the end result. For drying, Los Pinos utilizes raised and shaded beds for optimal stability and slow drying, taking 2-3 weeks to reach their final moisture content targets. In the cup, we find an explosive process-related mixed berry tone reminiscent of blue-raspberry candy with a white tealike texture that carries with it tons of delicate florals. This coffee is quite flexible under both of our QC brewing methods, the washed and natural recipes, with the washed recipe highlighting the incredible fruited character, and the natural recipe focusing deeply on the florality, which presents as jasmine and bergamot.

Source: Unblended Coffee

//cdn.shopify.com/s/files/1/0927/9163/6342/files/Shoebox_Coffee_-_Sergio_Caro_Chiroso_-_Washed_-_Colombia.webp?v=1784800128
shoebox-coffee-marlon-bolanos-gesha-washed-colombia
Marlon Bolaños Gesha - Washed - Colombia

Region: Huila, Colombia
Producer: Marlon Bolaños / The Three Coffee Farmers
Varietal: Gesha
Process: Washed: 48hrs held in cherry underwater in barrels, then fully drained and left to dry ferment further for another 48hrs, then fully washed and dried on raised beds for 10-15 days

Tasting notes: Yellow Fig, pineapple, bergamot

Producer info and cup notes:
As we near our 1 year anniversary of launching Shoebox, Colombia season is well underway and we are particularly interested in extremely high quality, advanced fermentation Geshas. This past harvest has truly brought us some of the best coffees we've ever had, and this fruit bomb from Marlon Bolaños's project "The Three Coffee Farmers" is amongst the best of them. Despite growing up in a coffee producing family, it wasn't until the age of 17 that Marlon took an interest in it, signing himself up for a Barista education course at SENA where he learned brewing, green coffee grading, and sensory analysis. Upon returning from that course, Marlon began planting differentiated varietals like pink bourbon, gesha, and chiroso while experimenting with new fermentation techniques on each subsequent harvest. Flash forward to today, and the farm is now owned by Marlon and his 2 brothers, Pedro and Hemerson. Marlon is responsible for quality control, fermentation protocols, sampling and part of the logistics operations. Marlon has also competed and won in several barista and brewing competitions over the last several years, taking spring water from his family's farm for brewing. It's especially suited for coffee due to the natural trace mineral composition, and now coveted by peers after earning the name "Champion's Water." This specific late harvest pink bourbon lot underwent a double fermentation very similar to the process he used for his washed Gesha, first being kept in sealed plastic barrels in cherry without water for 48 hours before being depulped and bulk fermented in the barrels for another 48 hours, then finally dried for 10-15 days on raised beds as a honey. In the cup, we find intensely bright and sweet citric acidity like yuzu lemonade, which quickly cools to a more rounded raw honey note in the centerline. As the cup fully cools, an array of florals rises to the surface alongside a more delicate stonefruit, reminding you of this varietal's Ethiopian heritage. Each year, they refine their processes and tweak their fermentation protocols, always seeking out incremental improvements and new flavor profiles. We feel it also very important to note, Priscilla and Ivan are some of the kindest folks we have ever met in coffee and have truly made an impression on us with their grace and respect, even when I personally was a greenbuyer with only 3 months experience under my belt a few years back, they took the time to visit and cup with us and even discuss sample roast profiles! Once all of the intended metrics have been met, the coffee is fully washed and dried in a dark room at controlled temperatures. This coffee cracked quite early, and as a result landed at a very low end temp, one of our lightest production roasts ever. Despite the extremely delicate touch on the roaster, this Panamanian Gesha is highly expressive, bright, and aromatically complex. This one instead landed quite dense and we were able to slam it with enough heat to really focus in on that brightness. In the cup, we find an immediate burst of lemon juice, like the last few drops of lemon-water at a restaurant that you squeezed a little extra into. Following this, the cup opens into a lovely depth of fruit with raspberry, fig and plum all crossing eachother's paths. The finish is sweet, clean and long lasting with a lovely cane sugar note that sticks around.

Source: Hachi Project

//cdn.shopify.com/s/files/1/0927/9163/6342/files/Shoebox_Coffee_-_Hachi_Kokumitsu_Paraneima_-_Washed_-_Panama.webp?v=1784800128
anamorphic-coffee-danche-hydro-honey-ethiopia
Danche - Hydro Honey - Ethiopia

Farm: Danche Washing Station
Producer: SNAP Specialty Coffee
Country: Ethiopia
Region: Gedeb, Gedeo, SNNPR
Process: Hydro Honey
Variety: Kurume, Dega, Wolisho
Notes: Strawberry Creme, Concord Grape, Lime
Elevation: 2110 MASL
Harvest: November 2025 - January 2026

This coffee was produced by the small holder farmers and the workers at Danche Washing Station in Gedeb, Gedeo, SNNPR Ethiopia. Ripe cherries are harvested and measured for sugar content. Only fruit with Brix content above 20 is selected. The cherries are mechanically sorted from green and defects, before being floated in ceramic tanks to remove floating cherries. The coffee is then placed on raised beds, and dried in shade for 48 hours. While the coffee is drying, the fermenting tanks are washed and smoked with olive trunks. The whole partially-dried cherries are then placed into the tanks, and quenched with water. The cherries undergo 24 hours of anaerobic fermentation, before being opened and fermented 24 hours aerobically.
